RECIPE: Mini Eggs Cookies

If you are not new, hello again old friend! I’m sorry it’s been a while since I have posted. Things have been a little hectic around here, getting adjusted to some new things and planning for exciting future things. Nevertheless, here I am again back with another recipe post!

Here’s a little secret you need to know about me…chocolate? Not my first and biggest food love. I’m sure I’ve written about it elsewhere in one of my other posts, but I am definitely more of a savoury person rather than a sweets person (ice cream is the exception). All the baked goodies I make? Well I love making them, but I don’t really eat them. My family has the special task of eating and finishing them.

BUT THESE COOKIES FRIENDS. Let me tell you…I keep sneaking into the kitchen and grabbing a cookie, because yes they are that addicting. AND even more so if you eat them warm (microwave them for 8-14 seconds according to Jen) and with a glass of cold milk.

The beauty? One bowl recipe. That’s right, ONE BOWL! You know me and my need to cut down as many dishes as possible.

So here we go, here’s my mini egg cookies recipe! Enjoy!

INGREDIENTS:

  • 1 cup (2 sticks) unsalted butter

  • 2 tsp vanilla

  • 1.5 cups brown sugar

  • 2 eggs

  • 2 1/4 cups of all purpose flour

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 package of mini eggs

DIRECTIONS:

  1. In a large microwave-safe bowl, melt your butter until fully melted. If you don’t have a large microwave-safe bowl, this will be a two bowl recipe for you! Use a small bowl to melt your butter. Pro tip: Melt your butter in increments of 10 seconds in the microwave. Why do this? If you put in the butter for more than 10 seconds at a time, your butter can explode. Trust me, I’ve done this many times from experience.

  2. If you melted your butter in a small bowl, put your melted butter into a large bowl that you are going to use to mix and make your cookie dough! Add in your brown sugar and mix. If you have a layer of butter on the top after you’ve mixed the two, this is normal!

  3. Add in the vanilla and eggs. Mix until combined.

  4. Add in your baking soda and salt, and mix. Then add your flour and mix until smooth!

  5. Now it’s time to add the mini eggs! Mix until combined.

  6. Cover the bowl and chill in the fridge for at least one hour! I find that this is the sweet spot for time in the fridge. Why chill the dough? This will help set your butter, so that when you bake it your butter will not spread as easily. Just trust me, chill first then bake!

  7. When you are ready to bake, preheat your oven to 375 F.

  8. Roll your dough into little balls and bake for 10 minutes (middle rack is the best spot)!
